for more than two decades as restaurateurs we have constantly sought out traditional farmers, producers and suppliers to provide us with the seasonal ingredients which are the basis of our ever changing menus...

here are some of the passionate people who supply the fresh produce that comes into our kitchen every week

   tod and barbara bulmer were our very first local producers:

just before we opened our restaurant we had been told about a farmer who grew asparagus somewhere on the other side of manchester... I still visit kenyon hall farm every week...

  carole faulkner  opened the chester cheese shop in 1985, the same year as we opened our original village restaurant... we seem to remember we first got together around 1988...

  tom parkinson took over his mum and dads organic dairy farm the day he graduated from agricultural college in 2006. mentioned in the doomsday book, tom's farm has been producing good food for quite a while!

  tony burns is one of the most knowledgeable wholesale butchers in the north west of england

  glyn morris has been buying tony's welsh lamb at st asaph livestock auction every thursday since 1989. a retired auctioneer told me "glyn always pays the best prices..." which also means he gets the best stock!

  eileen taylor comes from a family of pig farmers and runs a real, old fashioned pork shop

  chris neve can be found at the fish auction beside fleetwood docks most mornings at 6am. sometimes I join him...

  chris sandham  is the fourth generation of cheese makers in the village of barton, between lancashire's bowland forest and the fylde costal plain

  nicky leeth is possibly our smallest supplier, providing us with exquisite local honey

 reg johnson and bud swarbrick are so busy raising their nationally famous goosnargh duck and chicken that they never seem to be in when I arrive at their farm with my camera...

  food for free lancashire is blessed with beautiful moors and river valleys where we get quite a lot of our food for the price of a good walk!

   geoff owen is probably the best friend that I have ever had. he is the man who introduced me to the secret delights if italian cuisine ~ as well as it's wonderful wines... 

  milan market is one of my favourite places to be at 5 o'clock in the morning...

   renzo sobrino mills and sifts organic cereals at his mill in la morra ~ to enable us to bake the bread for your table and roll fresh pasta every day

  this young man produces the most perfect air dried tuscan hams and salamis

   piero cornacchia presses the abruzzo olives which make the olive oil for your table

   carlalberto relli is an italian coffee roaster par excellence
